Easy Meals....really easy meals

I did not get the cooking gene in my family. My sister did. She loves to cook and is so good at it. I on the other hand, go to the grocery store and buy exotic ingredients with high hopes of cooking awesome things about once a year. Those items are still in my pantry. (When did I ever think I was going to make something with coconut milk???)

On top of that I am super picky. (I would like to say I have a sophisticated palate.) Oh, and I don't eat red meat or pork and I "try" to eat healthy. So....that makes an easy meal even harder. But, for those of you who would rather watch reality tv and catch up on your blogs than cook a lovely meal, this is the post for you. My cooking consists of taking items out of a bag/box and literally putting them in the oven or skillet. But, since I love a good find, I do have a couple for you!

First things, first. Bertolli, frozen meals = Awesome. Literally put it in a skillet, 8 minutes later -done. My favorite is the shrimp, asparagus and penne because it is only 380 calories per serving and there are two servings per bag. Delish. It will not disappoint.


I am lucky because Tommy will eat whatever. (Tommy is lucky because he doesn't cook and would never eat if he was picky.) But, I LOVE Morning Star Veggie burgers. Put down the Boca brand, do not go near them. If you are going to do veggie get these.

And, because I am lazy I will heat the oven up to 425 and put veggie burgers in the oven the same time as the fries. Never had a problem.
If you guys are not buying frozen fries, you must. Ore Ida's fast food fries rival McDonald's. They are that good. Pop them in the oven and pull both your burger and fries out at the same time. That easy. I almost embarrassed to admit this...but since I am keepin it real, I even cover my pan with tin foil so I don't have to wash it.
For those of you that love sweet potato fries, Walmart makes awesome ones. And, their season fries are fab too. These stuffed chicken breasts are really good. I usually pair them with steamed broccoli (don't worry, I get that in a bag too.) Oh, just don't have guests over after this -- it is super good but your house smells like steamed broccoli.


If you have not tried a Taste of Thai you are soooo missing out. Just add water and it's 100 times better than easy mac. And, a portion of the proceeds goes to saving turtles in Asia. I love food you can feel good about.

My last fave is chicken parmesan from Walmart. It comes as a set. But, do not eat the pasta or sauce. It reminds me of school lunch. Just use your usual pasta and sauce you would typically make. But, the chicken is really good and it bakes up in about 30 minutes.

A reason to celebrate!

This weekend we travelled to Louisiana for PawPaw's (my dad's dad) 95th birthday party. Pretty impressive to live that long and have done so much good for others. My uncle put it nicely when he said that in life we encounter so many people who do things to you. But, with PawPaw, he always does things for you.

My Aunt Angie planned a very nice party at Ralph and Kacoo's in Shreveport. The place was great and so accommodating. A perfect space for over 50 people -- and that was just family.

Aunt Angie also had all of the family members bring pictures of Paw Paw over the years.

And, it was so fun to see all of my cousins' little ones! They are all so precious! Here is Baby Addison. If she was any cuter I might die. Look at those blue eyes and that brown hair!!! I didn't get a picture of all the cousins, including her darling brother! But, he is just as cute!

World's Greatest Aunt x 2

So, as you all know, my sister is about 4 months pregnant! But, she told me that she was expecting in a really cute way.

The day before and the day of Valentine's Day she kept telling me she had me a Valentine's gift. I thought that was really sweet considering we don't traditionally exchange gifts.

So, she gets to my house and has me a little bag of candy and a vase of daisies (I have since added the fake flowers).

The vase says "Aunts are Angels that get you through life." Still...thought nothing of it, since I am little Max's aunt. So, I was like, Thanks, Al, that was sweet. She kind of looked at me -- like are you getting it? And, I clearly wasn't, as I was like - I get it. I am Max's aunt.
Then, she was like well....and to me too. Seriously, I about died. I had NO clue. It was one of the funnest surprises ever. The funny thing is I think it took me about 3 minutes before it even dawned on me to say congratulations. I was just that shocked. I am sure the look on my face was priceless.
Allison had told us first because she was going to dinner at my mom's for dinner and was over by our house. Tommy was so funny. He was the one who said we HAD to go see my mom's reaction. So, we all went to my mom's to tell her.
Allison gave my mom a bib that said "Grandma's little love bug." My mom's jaw about dropped but then was like - which one of you? Talking about Allison and I.
We are all super excited! I cannot wait to spoil another baby!!! It is going to be the funnest.

Weekend update and cute stuff

We just got back from a short weekend trip to Louisiana for my PawPaw's 95th birthday. It was so fun to see all of my family and for such a happy occasion! My aunt planned a really nice party and I took lots of pictures, which I will upload this week.

Also, apparently people actually read this blog : ) and have reminded me that I said I would post pics of how my sister told me she was pregnant and still have not done so! Since the story requires pictures and I now have my camera back, I will do that this week too.

Since I am tired and lazy and don't feel I can do either post justice tonight, I am going to share another cute "party-in-a-box" from Polka Dots & Pirates on Etsy. Not only is the theme colorful and cute, she took a circus theme and didn't make it scary by including clowns.

The moment you have all been waiting for!

Max already has quite a little fan club! I have been fielding lots of questions about when I would post pics from Max's first birthday. Poor Kristen is in the middle of a move, but since she has a mini-celeb baby she helped me out by sending pics!

This is our little Top Dog making his birthday party debut. Is he not precious? He had just woken up from a nap to about 30 people taking his picture. He does not get ANY attention.

Tommy's cousin, Sophie made this cake. It turned out really cute. She is a natural artist!

This was little Max's cake. He just wasn't that into it. He didn't even try it. He wanted carrots. These are the "doggy bag" favors. They are filled with M&Ms in the party's colors.

How cute is this cheese? Kristen used a cookie cutter to cut them into bone shapes.

Max loved the chair Aunt Katie and Uncle Tommy gave him! It was so funny, he just knew it was for him!

Here is the debut of the World's Greatest Aunt t-shirt. I am in direct competition with Tommy's other sister, Tori. If you wonder what she looks like, she is the one staring at us in the picture. See, I told you we were in competition. She has her eye on me.

What I've been up to

I keep forgetting that I use this blog to keep you guys updated on my very small side business. I actually do stuff other than search the internet to find you guys fun stuff to read about.

Currently, I have been working with Habitat on their upcoming gala, Habitat Goes to Hollywood. (Shamless plug - we are looking for auction donations and table sponsors.) This year they are moving their event to the Renaissance and it will be so nice! I have had a lot of fun serving on the committee and was recently asked to join the Board of Directors. I still have to be voted on. So, you never know.... ; ) Anyway, below is the ad that will be running in the next issue of the Tulsa People and I did another ad that ran in March's edition. It is so fun to see your ads in print!


I have also been working with long-time family friend Chuck Fasciano on his recruiting business, CS Group. Mr. Fasciano had been working for years with no online footprint. I basically accosted him at the Y a few months ago and told him that we need to get him online!

And, in the process I learned so much about his business. Many of you might remember him from his former restaurant Angelo's at 31st and Harvard (now Robert Zoellner's eye). Well, Mr. F has still been in the food and beverage industry as a recruiter. He has a niche and I am a HUGE fan of knowing your niche and sticking with it. I also had fun working with his logo too. I made it look like a bottle cap. Get it?

Call for help

Since I take my world's greatest aunt title VERY seriously, I am asking for you guys' help! My darling sister is 'with child' and is looking for a new crib. Any ideas on where to get a good one not at boutique prices? She is specifically looking for one that doesn't have the higher back (mainly for convertible beds) and is an espresso stain.
